Method

Loaded Fries

  1. 1

    Bake the fries

Preheat the oven to 425°F (220°C). Arrange the frozen fries in a single layer on a large rimmed baking sheet (line with parchment if desired). Bake according to package instructions until crisp and golden, usually 20–28 minutes, flipping once halfway through. For extra crispiness, broil 1–2 minutes at the end while watching closely.

  2. 2

    Sauté vegetables and warm chicken

While fries bake, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sliced onion and both bell peppers and sauté 4–6 minutes until softened and beginning to brown. Add shredded/diced cooked chicken, chili powder, cumin, smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook another 2–3 minutes until chicken is heated through and spices are fragrant. Taste and adjust seasoning.

  3. 3

    Warm nacho cheese

Place the jarred nacho cheese in a small saucepan over low heat or microwave in a microwave-safe bowl in 20–30 second increments until warm and pourable, stirring to smooth.

  4. 4

    Assemble and melt cheeses

When fries are crisp, remove the baking sheet from the oven. Immediately scatter half of the cheddar and Monterey Jack over the fries, then spoon the hot chicken, onion and pepper mixture evenly across the fries. Return the sheet to the oven for 3–5 minutes, or until shredded cheeses have melted.

  5. 5

    Finish and garnish

Remove the loaded fries from the oven. Drizzle the warm nacho cheese over the fries and chicken. Sprinkle the remaining shredded cheddar and Monterey Jack (if desired) so it melts a little from the residual heat. Top with sliced scallions, pickled jalapeños, and chopped cilantro. Serve with lime wedges on the side to squeeze over before eating.

  6. 6

    Seasoning adjustments and serving

Taste one fry and adjust with additional salt, black pepper, or a squeeze of lime if needed. Serve immediately while hot and shareable.
