VQA); 1 unit Ice bucket; 6 cubes Ice; 4 unit Wine glasses (white wine glasses or universal); 120 ml Sparkling water (for spritz or lengthen); 1 unit Lemon twist (thin); 75 g Soft goat cheese; 1 unit Thinly sliced pear; 8 unit Lightly toasted baguette slices

Place the sealed bottle of Unoaked Chardonnay in the refrigerator for at least 2 hours before serving, or chill in an ice bucket filled with ice and cold water for 20–30 minutes until the bottle reaches about 8–10°C (46–50°F).

Chill the bottle

If using an ice bucket, fill with ice and enough cold water to surround the lower half of the bottle. Add 4–6 ice cubes if using a serving bucket rather than full submersion.

Prepare ice bucket

Use chilled white wine glasses or universal wine glasses. Rinse glasses briefly with cold water then drain to slightly cool the glass without diluting the wine.

Select glassware

Use a waiter’s corkscrew to remove the cork cleanly. Wipe the neck with a napkin to remove any cork bits or sediment.

Open bottle

Pour about 120–150 ml (4–5 oz) per serving into each glass, filling to roughly one-third of the glass to allow aromas to concentrate. For the optional spritz, pour 90–100 ml of wine and top with 120 ml sparkling water.

Cut a thin strip of lemon peel. Twist it over the glass to release oils and then drop or rest on the rim of the glass for a bright aromatic accent that complements the crisp acidity of an unoaked Chardonnay.

Lemon twist garnish

Arrange soft goat cheese on a board with thinly sliced pear and toasted baguette slices. Serve alongside the wine; the wine’s citrus and orchard-fruit qualities pair well with creamy tangy cheese and the sweetness of pear.

Cheese and fruit pairing

For a light, refreshing variation: in a large white wine glass, combine 90–100 ml chilled Unoaked Chardonnay with 120 ml chilled sparkling water and a lemon twist. Serve over one or two ice cubes if desired.
