Prepare
Preheat the oven to 350°F (175°C). Grease and line the bottom of an 8-inch round cake pan with parchment paper and grease the sides lightly.
Dry ingredients
In a medium bowl whisk together 1.75 cups all-purpose flour, 2 tsp baking powder, and 1/2 tsp fine sea salt until evenly combined. Set aside.
Cream butter and sugar
In a large bowl or the bowl of a stand mixer fitted with the paddle, beat 1/2 cup softened unsalted butter and 1 cup granulated sugar on medium-high speed for 2–3 minutes until pale and fluffy.
Add eggs and flavor
Reduce speed to medium. Add the eggs one at a time, beating 20–30 seconds after each addition until incorporated. Add 1 tsp vanilla extract, 1 tsp rose water, and 1 tsp lemon zest; beat briefly to combine.
Combine wet and dry
With the mixer on low, add the dry ingredients in three additions, alternating with the 3/4 cup whole milk (start and end with dry). Mix each addition just until combined—do not overmix.
Rose-Cardamom Syrup
While the cake bakes or cools, make the syrup. In a small saucepan combine 1/2 cup granulated sugar, 1/2 cup water, and 4 lightly crushed green cardamom pods. Bring to a simmer over medium heat, stirring to dissolve the sugar. Let simmer gently for 3–4 minutes to infuse the cardamom, then remove from heat. Stir in 1 tsp rose water and 1 tbsp fresh lemon juice. Allow the syrup to cool for 10–15 minutes, then discard the cardamom pods and keep the warm syrup for soaking.
Assembly (Soak and Frost)
Make the buttercream
In a clean bowl, beat 3/4 cup softened unsalted butter on medium speed until smooth, 1–2 minutes. Gradually add 2.5 cups sifted confectioners' sugar on low speed, scraping down the bowl as needed. Add 2 tbsp heavy cream, 1 tsp rose water, 1/2 tsp vanilla extract, and a pinch (1/4 tsp) fine sea salt. Beat on medium-high until light and fluffy, about 2–3 minutes. If desired, add a small pinch (about 1/4 tsp) beetroot powder or a drop of pink coloring and beat to incorporate for a soft rose hue. Adjust consistency with an extra teaspoon of cream if too stiff, or a tablespoon more sugar if too loose.
Frost
Using an offset spatula, apply a thin crumb coat of rose buttercream to the soaked cake and refrigerate 15–20 minutes to set. Apply a final even layer of buttercream, smoothing the top and sides. If you prefer a textured finish, drag the back of a spoon or an offset spatula to create gentle waves that catch light like petals.
Garnish
Lightly press 1/4 cup toasted sliced almonds around the base or sprinkle on top for crunch. Arrange edible rose petals on the top (about 8–12 petals) and dust very lightly with 1 tsp powdered sugar for a dewy look. Optionally drizzle remaining rose-cardamom syrup over the top just before serving for extra fragrance.
