Gently shape the 0.25-lb portion of sirloin into a patty about 3.5" (9 cm) wide and roughly 1/2" (1.3 cm) thick. Avoid overworking the meat to keep the burger tender. Make a shallow dimple in the center with your thumb to reduce puffing while cooking.

Form patty

Season both sides of the patty with the fine sea salt and freshly ground black pepper. Press the seasoning lightly into the meat so it adheres.

Season

Heat a skillet or griddle over medium heat. Spread 1/2 tsp softened butter on the cut sides of the ACE bun. Place the bun cut-side down on the skillet and toast for 30–60 seconds until light golden. Remove and set aside.

Increase heat to medium-high. Add a small drop of neutral oil if your pan is dry. Place the patty in the hot skillet. Cook for about 2.5–3 minutes on the first side without pressing (for a small kids patty) until a brown crust forms. If adding cheese, place the slice on the patty 30–45 seconds before removing from the pan and cover loosely to melt.

Cook patty

Spread ketchup and mustard on the inside of the top bun (or mayo if preferred). On the bottom bun, place the lettuce leaf, tomato slice, and the cooked patty (cheese-side up if used). Top with dill pickle slices and place the toasted top bun. Cut the burger in half if desired for easier eating.

Assemble

If using frozen oven-ready fries, preheat oven and cook according to package instructions (typically 425°F/220°C for 15–20 minutes). Toss fries halfway through for even browning. Portion approximately 3/4 cup per kid.
