Prep the shrimp

Pat the peeled and deveined shrimp dry with paper towels. If shrimp are large, cut into 1/2–3/4-inch pieces to make popcorn-size bites. Place in a bowl and set aside.

Make dry mix

In a shallow bowl combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Whisk to blend evenly.

Make wet mix

In a separate bowl whisk together the eggs and buttermilk until smooth.

Prep breadcrumb mix

In a third shallow bowl combine the panko breadcrumbs and crushed tortilla chips (if using). Lightly press to combine; the chips add extra crunch and flavor.

Dredge the shrimp

Working in batches to avoid crowding, toss shrimp first in the dry flour mixture to coat, shake off excess, then dip into the egg-buttermilk mixture, and finally press into the panko mixture to fully coat. Place breaded shrimp on a wire rack while you heat oil.

Heat oil

Pour vegetable oil into a deep heavy pot or Dutch oven to a depth of about 2–3 inches (roughly 1 liter will usually suffice). Heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test with one bread crumb — it should sizzle and turn golden in about 30 seconds.

Fry the shrimp

Fry the breaded shrimp in small batches (avoid overcrowding) for 1.5–2.5 minutes per batch, turning as needed, until golden brown and cooked through. Remove with a slotted spoon or spider to a paper towel-lined tray or wire rack to drain. Keep fried shrimp loosely covered and warm in a low oven (200°F / 95°C) while you finish remaining batches.

Combine sauce ingredients

In a bowl combine the mayonnaise, creamy garlic sauce (if using), sweet Thai chili sauce, lime juice, rice vinegar, soy sauce, honey, minced garlic, chopped cilantro, and optional hot sauce. Whisk until smooth and homogenous.

Adjust seasoning

Taste the sauce and adjust balance: add more lime for tang, more chili sauce for sweetness/heat, or a pinch more salt if needed. The sauce should be creamy, tangy, slightly sweet, and garlicky with cilantro freshness.

Toss & Serve

Toss shrimp in sauce

Place hot fried shrimp in a large bowl. Spoon 3/4 of the prepared KAPOW! sauce over the shrimp and gently toss to coat evenly. Taste and add more sauce to reach desired glaze level; you may not need all the sauce so reserve some for serving.

Plate and garnish

Transfer coated shrimp to a serving platter. Garnish with extra chopped cilantro, sliced jalapeño if desired, and lime wedges on the side. Serve immediately with remaining sauce for dipping.

Storage and reheating

Leftover sauce: refrigerate in an airtight container up to 4 days. Leftover fried shrimp are best reheated in a 350°F (175°C) oven on a wire rack for 6–8 minutes to crisp. Toss with fresh sauce just before serving to maintain crunch.
