Beef Rib and Rub
Trim and Prep
Pat ribs dry with paper towels. Remove excess silver skin or membrane if present and trim small hard pieces of fat so the rub can adhere.
Apply Binder and Rub
Spread a thin layer of yellow mustard over all sides of each rib to help the rub stick. In a bowl combine kosher salt, coarse black pepper, paprika, brown sugar, garlic powder, onion powder and cayenne. Rub the mixture evenly over all surfaces of the ribs, pressing lightly so it adheres. Let rest at room temperature 30 minutes or refrigerate up to overnight.
Smoking / Grilling
Preheat Smoker
Prepare your smoker for indirect heat and stabilize at 225°F (107°C). Add soaked apple or hickory chips to the smoker box or charcoal to generate a steady, moderate smoke.
Smoke Low and Slow
Place ribs bone-side down on the grate. Smoke at 225°F for 3–4 hours, maintaining steady temperature and adding wood chips as required. Every 45 minutes lightly spray/mop the ribs with a mixture of 1 cup apple cider vinegar and 1 cup water to keep them moist and encourage bark formation.
Texas Crutch (optional)
When ribs reach an internal temp of about 165°F (after bark has set, typically 3–4 hours), place each rack on a double sheet of heavy-duty foil. Add 1/4 to 1/2 cup beer or beef stock to the foil to create steam. Wrap tightly and return to smoker for 1.5–2 hours until meat is tender and internal temp reaches 200–205°F and probe slides in with little resistance.
Sauce and Finish on Grill
Remove ribs from foil and place back on the smoker or a hot indirect grill. Brush a light coat of BBQ sauce on both sides and cook 10–15 minutes unwrapped to set the glaze, flipping once and adding another thin coat of sauce near the end. Let rest 10–15 minutes before slicing between bones.
Seasoned Fries
Cook Fries
For oven: spread fries in a single layer on a rimmed baking sheet lined with parchment and bake at 425°F (220°C) for 25–35 minutes, flipping halfway, until golden and crisp. For fryer: preheat oil to 350°F (175°C) and fry in batches 3–5 minutes until golden, drain on paper towels and season immediately. Keep warm until serving.
Baked Beans (in-house)
Combine and Simmer
Add drained beans, brown sugar, ketchup, mustard, apple cider vinegar, Worcestershire, salt and pepper. Stir to combine and simmer gently for 15–20 minutes to meld flavors, stirring occasionally. Adjust seasoning to taste and keep warm for service.
Coleslaw (alternative to beans)
Make Dressing
In a bowl whisk together mayonnaise, apple cider vinegar, sugar, salt and pepper until smooth.
Toss Slaw
Combine shredded cabbage and shredded carrot in a large bowl. Pour dressing over vegetables and toss to coat evenly. Refrigerate at least 30 minutes to let flavors meld. Taste and adjust salt/sugar if needed before serving.
Cornbread
Mix Batter
Preheat oven to 400°F (200°C). In a large bowl whisk together cornmeal, flour, baking powder, salt and sugar. In a separate bowl beat egg with milk and melted butter. Pour wet into dry and stir until just combined; do not overmix.
Finishing and Service
Temperature and Timing Notes
Total cook time for ribs is roughly 5–7 hours depending on size and whether you use the foil braise. Check tenderness with a probe rather than just time. Fries and sides can be prepared while ribs are finishing to ensure everything is served hot.
