Make simple cotton candy syrup mix

In a small measuring cup or bowl combine the cotton candy syrup and granulated sugar. Add the fresh lemon juice and 60 ml of the cold water. Stir until the sugar is mostly dissolved. The lemon brightens the sweetness and helps balance the icy.

Prepare blender

Add the remaining 120 ml cold water and 2 cups of ice cubes to a high-speed blender. Pour the cotton candy syrup mixture over the ice.

Blend to icy texture

Pulse the blender 5–10 times, then blend on low speed for 15–25 seconds, scraping down the sides once if needed, until you have a smooth, slushy/icy texture. If mixture is too watery, add a few more ice cubes and pulse. If too thick, add up to 30 ml more cold water and blend briefly.

Taste and adjust

Taste the icy. If you want it sweeter, stir in an additional 1/2–1 tbs cotton candy syrup. If it feels overly sweet, add 1 tsp lemon juice and blend quickly to incorporate.

Finishing & Garnish

Transfer the cotton candy icy into a chilled tall glass, leaving a little room at the top for garnish.

Gently place a light pinch of pink cotton candy on top of the icy just before serving so it sits above the cold surface (it will dissolve slowly into the slush). Add a sprinkle of colored sprinkles if desired for a carnival look.

If you like, rub the lemon wedge around the rim of the glass before pouring and lightly press a little cotton candy against the rim so it adheres. Serve immediately with a spoon and straw.
