Preheat and prepare baking sheet

Preheat the oven to 375°F (190°C). Line a large rimmed baking sheet with parchment paper or aluminum foil. Lightly brush or spray the sheet with vegetable oil or nonstick spray to help chips crisp evenly.

Arrange chips

Spread 8 cups of tortilla chips in an even single layer on the prepared baking sheet, slightly overlapping but avoiding a thick mound so cheese can melt through to the bottom chips.

Add cheese

Evenly sprinkle the shredded cheddar and monterey jack cheeses over the chips, making sure to cover most chips so every bite will have melted cheese. If using optional black beans, scatter them evenly now.

Bake in the preheated oven for 6–9 minutes, or until cheese is fully melted and bubbly. Watch closely after 6 minutes to avoid burning. For a slightly browned top, broil on high for 20–60 seconds — watch constantly.

Fresh toppings

Prepare toppings while chips bake: dice the tomato (about 1 cup diced), thinly slice the green onions and jalapeño, and chop the cilantro. If you prefer milder heat, remove jalapeño seeds and ribs before slicing.

When cheese is melted, remove the baking sheet from the oven and immediately scatter the diced tomatoes, sliced jalapeño, green onions, and chopped cilantro over the hot cheese so toppings warm slightly and integrate with the cheese.

Condiments & serve

Portion sour cream and salsa into small bowls for serving. If desired, thin the sour cream with 1–2 teaspoons of lime juice or water to make it easier to dollop or drizzle.

Serve the nachos hot from the baking sheet or transfer to a large platter. Offer lime wedges on the side and optional pickled jalapeños. Encourage guests to scoop up chips with plenty of melted cheese and fresh toppings.
