Cook the dal

Rinse and soak

Rinse 1 cup dal under cold water until the water runs clear. Soak for 15–30 minutes if time allows (helps it cook evenly). Drain.

Cook dal

In a medium saucepan or pressure cooker, combine the rinsed dal, 3 cups water, 1 tsp turmeric and a pinch of salt. If using a pressure cooker, cook on medium for 3–4 whistles then simmer 5 minutes and release pressure. If using a saucepan, bring to a boil, then reduce heat and simmer covered for 25–30 minutes until dal is soft and breaking apart, stirring occasionally and skimming foam. Add additional water (up to 1 cup) if dal becomes too thick; the final consistency should be slightly soupy but creamy.

Mash and season

Once cooked, use a spoon or potato masher to lightly mash some of the dal to thicken and create a smooth, slightly textured consistency. Stir in 1 tsp salt (adjust to taste). Keep warm while preparing the tempering.

Prepare the tempering (tadka)

Heat 2 tbs oil or ghee in a small skillet or tadka pan over medium heat until shimmering.

Add 1 tsp mustard seeds and 1 tsp cumin seeds. When the mustard seeds begin to pop (10–20 seconds), add 6 whole black peppercorns, 1 tsp urad dal (or chana dal) and 1 tsp fenugreek seeds (if using). Fry until the dal pieces turn light golden, about 30–40 seconds, taking care not to burn them.

Add 2 dried red chilies and the sliced small onion/shallots (1 cup). Sauté until the onions are soft and translucent and starting to caramelize, about 4–6 minutes.

Stir in 1 tbsp chopped ginger, 2 minced garlic cloves and the slit green chili (if using). Cook 1–2 minutes until fragrant.

Add 8 curry leaves and 1 tsp Kashmiri chili powder, 1 tsp ground coriander. Fry briefly (15–20 seconds) to bloom the spices without burning.

Turn off the heat and immediately pour this hot tempering over the cooked dal. Stir well so the flavors meld.

Add 1 tsp lemon juice or tamarind paste to introduce a gentle sour note; taste and adjust salt, chili, or acidity as needed.

Finish and serve

Garnish the dal with 2 tbs chopped cilantro and a light dusting of freshly ground black pepper (about 1 tsp). If desired, finish with a 1 tsp drizzle of ghee on top for extra richness.

Serve hot with steamed rice, roti, or as part of a larger meal. Leftovers keep in the refrigerator for up to 3 days; reheat gently adding a splash of water to loosen the dal.
