Prepare oven and pans

Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan (or line with parchment) and lightly dust with flour or cocoa powder. Alternatively, use two 8-inch pans for thinner layers.

Mix dry ingredients

In a large bowl, sift (or whisk) together 1.5 cups all-purpose flour, 0.75 cup unsweetened cocoa powder, 1.5 cups granulated sugar, 1 tsp baking powder, 0.5 tsp baking soda, and 0.5 tsp salt until evenly combined.

Combine wet ingredients

In a separate bowl or large measuring cup, whisk together 2 large eggs, 1 cup buttermilk, 0.5 cup neutral oil, and 1 tsp vanilla extract until smooth.

Incorporate wet into dry

Make a well in the dry ingredients and pour in the wet mixture. Stir with a spatula or whisk just until combined; do not overmix. Batter will be thick.

Add hot water

Stir in 0.5 cup hot water (hot but not boiling) slowly until batter is smooth and slightly thinner — this yields a moist crumb and intensifies the chocolate flavor.

Bake

Pour batter into the prepared pan(s), smoothing the top. Bake in the preheated oven 28–35 minutes for a 9-inch pan (or 22–28 minutes for two 8-inch pans), until a toothpick inserted into the center comes out with a few moist crumbs but not raw batter.

Cool

Allow cake(s) to cool in the pan(s) for 10–15 minutes, then run a knife around the edge and invert onto a wire rack. Cool completely before assembling and glazing (about 1–2 hours).

Chocolate Ganache & Filling

Warm the cream

Place 0.75 cup heavy cream in a small saucepan and warm over medium heat until it just begins to simmer around the edges (do not boil). If using 0.5 tsp instant espresso powder, stir it into the cream as it warms.

Make ganache

Place 8 oz semi-sweet chocolate chips in a medium heatproof bowl. Pour the hot cream over the chocolate and let sit 1–2 minutes to soften. Stir gently from the center outward until smooth and glossy. Stir in 1 tbsp unsalted butter until incorporated. If the ganache is too thick for pouring, warm gently over a double boiler or microwave in 10-second bursts, stirring between, until pourable.

Assemble filling (if using layers)

If you baked two layers, spread a thin layer of ganache between the layers for a rich filling. For a single cake, skip this step or split the cake horizontally with a long serrated knife and fill with ganache.

Pour ganache over cake

Place the cooled cake on a wire rack set over a baking sheet to catch drips. Pour the warm ganache over the center of the cake and use an offset spatula to gently push it toward the edges, letting it drip down the sides for an even coating. Work quickly before ganache sets.

Set ganache

Allow the ganache to set at room temperature for 30–60 minutes. For faster setting, refrigerate the cake for 15–20 minutes, but bring back to room temperature before serving for the best texture.

Apply toppings

Immediately after pouring the ganache (while it's still tacky), sprinkle 0.5 cup mini chocolate chips and 0.25 cup chocolate shavings or curls over the top, pressing very gently so that some adhere to the ganache and some remain loose for texture.

Dust the top lightly with 1 tsp cocoa powder through a fine sieve for a subtle matte finish. If desired, sprinkle 0.25 tsp sea salt flakes strategically to balance sweetness and highlight chocolate flavors.

Slice and serve

Let the cake rest 10–15 minutes after decorating so the toppings set. Use a sharp knife wiped clean between slices to cut neat pieces. Serve at room temperature for best flavor and texture.
