Cold Sparkling Citrus Soda
Chill equipment
If possible, chill your serving glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the ingredients. Cold ingredients keep the drink fizzy longer.
Prepare citrus
Roll the lemon and lime on the counter firmly to loosen juices. Cut and measure 0.5 oz (about 1 tablespoon) fresh lime juice and 0.5 oz fresh lemon juice. Remove seeds.
Sweeten
If using superfine sugar: put 1 tsp sugar into the chilled glass, add the measured fresh citrus juices, and stir vigorously until the sugar dissolves (about 20–30 seconds). If using simple syrup: add 1 tsp simple syrup directly to the juice and stir to combine.
Assemble
Add 1 cup of ice cubes to the prepared glass. Pour the citrus-sweetener mixture over the ice. Slowly add 1 cup (8 fl oz) sparkling water or club soda down the side of the glass to preserve carbonation. If you prefer a sweeter, more commercial Sprite-like profile, substitute or top with up to 2 oz lemon-lime soda instead of (or in addition to) some of the sparkling water—add it last.
Garnish and serve
Gently stir once with a long spoon (1 gentle turn) to integrate juices without flattening the bubbles. Garnish with a lemon wheel and a lime wheel on the rim or floated on top. Serve immediately while fizzy.
Notes: Adjust the sweetness to taste — add up to 1/2 tsp more sugar or another 1/2 oz simple syrup if you like it sweeter. For a zero-sugar version, omit sugar and use a few drops of liquid stevia or another zero-calorie sweetener, dissolving as needed.
