Crack the eggs into a medium bowl. Add the milk, salt, and black pepper. Whisk vigorously until the mixture is homogenous and slightly frothy (about 20–30 seconds). Grate the cheddar, dice the ham into roughly 1/4-inch pieces, finely chop the onion and chives.
Cook filling
Sweat onion and warm ham
Heat a nonstick 8–10 inch skillet over medium heat. Add the butter and olive oil. When the butter is melted and bubbling but not browned (about 1 minute), add the chopped onion and cook, stirring occasionally, until soft and translucent, about 2–3 minutes. Add the diced ham and cook until warmed through and edges begin to caramelize slightly, about 1–2 minutes. Transfer the ham and onion to a small bowl and set aside.
Cook omelette
Cook egg base
Reduce heat to medium-low. Wipe the skillet clean with a paper towel and return it to medium-low heat (or use the same skillet if you prefer more flavor). Add a small pat of butter (optional) or 1/2 tsp oil and swirl to coat. Pour the whisked egg mixture into the skillet and let sit undisturbed for about 10–15 seconds until edges begin to set.
Finish and rest
Let the folded omelette cook for another 20–30 seconds to melt cheese and finish cooking (internal should be set but still tender). Slide the omelette onto a plate and let rest for 30–60 seconds — residual heat will finish cooking without drying it out.
