Prepare spreads

Spread the softened butter evenly on one side of each bread slice. On the non-buttered side of one slice, spread the Dijon mustard; on the non-buttered side of the other slice, spread the mayonnaise. These will be the interior faces of the sandwich.

Assemble

Place one slice of bread buttered-side down on a clean surface (buttered side will face the pan if toasting). On the mustard-spread side, layer the ham evenly across the bread so it reaches the edges. Add the cheese slices on top of the ham. If using, add pickle slices and a lettuce leaf on the cheese. Finish by placing the second slice of bread on top, buttered side up.

Serve cold

If you prefer a cold sandwich, cut the sandwich in half diagonally or straight and serve immediately.

Pan-toasting (optional)

Preheat pan

Place a nonstick or cast-iron skillet over medium-low heat and add 1 tsp unsalted butter. Let the butter melt and coat the pan.

Toast sandwich

Place the assembled sandwich in the skillet. Cook 2–3 minutes on the first side, pressing lightly with a spatula, until golden brown. Flip and cook another 2–3 minutes until the second side is golden and the cheese has melted. If the bread is browning too quickly before the cheese melts, lower the heat slightly and cover the pan for 1–2 minutes to encourage melting.

Finish and serve

Remove the sandwich from the skillet, let rest 1 minute, then cut in half and serve hot.
