Method

    Bring 1 cup (2 sticks) unsalted butter to room temperature (soft but still cool) or slightly soften in microwave in 8–10 second bursts. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.

    In a large mixing bowl or stand mixer fitted with the paddle attachment, cream the softened butter with 1/2 cup granulated sugar and 3/4 cup packed light brown sugar until light and fluffy, about 2–3 minutes on medium speed. Scrape down the bowl as needed.

    Beat in 1 large egg until incorporated, then mix in 1 teaspoon vanilla extract until homogeneous, scraping the bowl once more.

    In a separate bowl, whisk together 2 1/4 cups all-purpose flour, 1/2 teaspoon baking soda, and 1/2 teaspoon fine sea salt until evenly distributed.

    With the mixer on low, gradually add the flour mixture to the butter-sugar-egg mixture, mixing just until combined and no large streaks of flour remain. Do not overmix; stop as soon as dough comes together.

    Using a spatula, fold 1 cup rolled oats, 1 cup semisweet chocolate chips, and 1/2 cup toasted chopped walnuts or pecans (if using) into the dough until evenly distributed.

    For thicker, chewier cookies, cover the dough and chill in the refrigerator for 30–60 minutes. If short on time, you can bake immediately.

    Using a 1.5 tablespoon scoop or a tablespoon, portion dough into 1.5 tablespoon (approx. 20–24 g) balls. Place balls on prepared baking sheets spaced 2 inches apart to allow for spreading. Gently press a few extra chocolate chips onto the top of each dough ball for an attractive finish.

    Bake one sheet at a time in the center of the preheated 350°F (175°C) oven for 9–12 minutes, rotating the sheet halfway through baking. Cookies should be golden at the edges and slightly soft in the centers.

    Remove cookies from oven and immediately, if desired, brush tops lightly with 1 tablespoon melted butter and sprinkle each with a tiny pinch of coarse sea salt (about 1/16 tsp per cookie) while still warm. This enhances shine, flavor, and texture.

    Allow cookies to cool on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely. The centers will firm up as they cool.

Serving & storage

    Serve Monicookies at room temperature. Store cooled cookies in an airtight container at room temperature for up to 4 days. For longer storage, freeze baked cookies in a single layer on a tray until firm, then transfer to a freezer-safe bag for up to 3 months. To refresh, warm frozen cookies in a 300°F (150°C) oven for 5–7 minutes or microwave for 10–15 seconds.
