For the Filet Mignon

    Prepare the Steaks

    Remove the filet mignon steaks from the refrigerator and let them come to room temperature for about 30 minutes before cooking. This ensures even cooking.

    Season the Steaks

    Pat the steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Steaks

    In a large skillet, heat the olive oil over medium-high heat until shimmering. Add the steaks to the skillet and sear for about 3-4 minutes on each side for medium-rare. Adjust the time according to your desired doneness.

    Add Flavor

    During the last minute of cooking, add butter, crushed garlic cloves, and fresh thyme to the skillet. Spoon the melted butter over the steaks as they finish cooking.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest for 5 minutes before serving. This allows the juices to redistribute.

For the Garlic Mashed Potatoes

    Prepare the Potatoes

    Peel and chop the Yukon Gold potatoes into quarters. Place them in a large pot of salted water and add the garlic cloves.

    Bring the pot to a boil over high heat. Reduce to a simmer and cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Drain the potatoes and garlic, then return them to the pot. Add butter, heavy cream, salt, and black pepper.
