Method

Preparation Directions

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with cocoa powder to prevent sticking.

  2. 2

    Melt the Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals, stirring until smooth and fully combined.

  3. 3

Mix in the Sugar and Eggs

Once the chocolate mixture has cooled slightly, whisk in the granulated sugar until fully incorporated. Add the large eggs and egg yolks, one at a time, mixing well after each addition.

  4. 4

    Add Vanilla and Dry Ingredients

Stir in the vanilla extract and a pinch of salt. Gently fold in the all-purpose flour until just combined, being careful not to overmix.

  5. 5

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about ¾ full.

  6. 6

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should still be soft.

  7. 7

    Cool and Serve

Let the cakes cool for 1 minute before gently running a knife around the edges. Invert each ramekin onto a plate and serve immediately, optionally with ice cream or whipped cream.
