Cook eggs (scrambled or fried)
For scrambled: heat a nonstick 8–10 inch skillet over medium-low heat and melt 1 tablespoon butter until foaming but not browning. Pour in the eggs and let sit 5–8 seconds, then gently stir with a silicone spatula, folding from the outside in. Cook to soft curds, about 1.5–2.5 minutes, remove from heat slightly before set — carryover heat will finish them. For fried: heat skillet over medium, add 1 tbs butter, crack eggs gently into skillet, cook until whites set and yolks reach desired doneness (about 2–3 minutes for runny yolks), cover for over-easy/medium as needed.

Prepare date glaze
If using bacon: pit the Medjool dates and finely chop them. In a small saucepan over low heat, combine chopped dates, 1 tablespoon brown sugar and 1 tablespoon water. Stir until the dates break down and form a thick glaze, 3–4 minutes. If mixture is too thick, add up to 1 teaspoon more water. Remove from heat and set aside. For sausage option: you can still make a small date glaze to brush on links after cooking or skip glaze and serve sausage plain.
Cook bacon and apply glaze
Preheat a skillet or oven to 375°F (190°C). For skillet method: heat a large cast-iron or stainless pan over medium heat. Lay bacon slices in a single layer and cook 2–3 minutes per side until nearly crisp. Spoon or brush the date glaze on the top side of each slice in the last 1–2 minutes and allow glaze to caramelize slightly, 30–60 seconds; watch carefully to avoid burning. For oven method: place bacon on a foil-lined baking sheet, bake 12–18 minutes until nearly crisp, remove, brush glaze onto bacon and return to oven 1–2 minutes to set. Transfer glazed bacon to paper towel-lined plate to drain. For sausage: heat a skillet over medium, add 1 tsp oil, cook sausage links, turning occasionally, until browned and cooked through (about 8–10 minutes). If using glaze for sausage, brush in final minute and let set.
Keep meat warm with eggs while finishing hash browns and toast.
Hash Browns
Prepare potatoes
Grate the peeled russet potato on the large holes of a box grater. Place grated potato into a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible — this ensures crispness. Transfer to a bowl and season with 3/4 teaspoon salt and 1/4 teaspoon pepper; toss to combine.
Cook hash browns
Heat a 10-inch skillet over medium-high. Add 2 tablespoons vegetable oil and 1 tablespoon butter; when shimmering and butter is foaming, spread the grated potato into an even layer and press down with a spatula. Reduce heat slightly to medium. Cook undisturbed until the bottom is deeply golden and crisp, 6–8 minutes. Flip in sections (or invert onto a plate and slide back into the pan) and cook the other side 4–6 minutes until golden. Adjust seasoning if needed and transfer to a warm plate.
Toast
While hash browns cook, toast the two bread slices in a toaster or under a broiler until golden, 1–2 minutes. Spread butter on the hot toast and keep warm.
