Toast
Prep bread
Bring sliced rustic bread to room temperature if refrigerated. Pat lightly with a clean towel if moist.
Butter and toast
Spread about 1/2 tbs of the softened butter on one side of each slice. If using olive oil, brush a thin layer on the opposite side for extra flavor. For stovetop: Place bread butter-side down in the hot skillet and press gently, 2–3 minutes until golden and crisp, then flip and toast the other side 1–2 minutes until lightly golden. For oven: Arrange slices butter-side up on a baking sheet and bake 6–8 minutes until edges are toasted and butter has melted; flip and bake another 2–3 minutes for crispness. Remove and keep warm.
Finish
Lightly sprinkle toasted slices with a pinch of sea salt flakes while still warm (optional).
Jam & Spread Variations
Warm jam (optional)
If jam is firm, warm 3/4 cup strawberry jam or preserves gently in a small saucepan over low heat 2–3 minutes, stirring, until spreadable. Do not boil. Alternatively microwave in a small bowl in 10–15 second bursts, stirring, until spreadable.
Prepare ricotta spread (optional)
In a small bowl stir together 1/2 cup ricotta and 1 tsp honey until smooth. Taste and adjust honey for sweetness.
Assemble spreads
Decide on combinations: - Simple: Spread warmed strawberry jam on each toast. - Apricot & Ricotta: Spread a thin layer of ricotta mix, top with a spoonful of apricot preserves. - Lemon Bright: Spread a thin layer of lemon curd and finish with a tiny grating of fresh lemon zest. Use roughly 1–2 tbs jam or spread per slice depending on preference.
Garnishes & Extras
Add fruit and nuts
Top the jambed toast with fresh berries (scatter about 1–2 tbsp per slice) and sprinkle toasted almonds or chopped walnuts evenly (about 1/3 tbs per slice).
Finish with herbs and pepper
Tear fresh mint leaves and scatter over the toasts for brightness. If using, grate a very light crack of black pepper over lemon or ricotta-topped toasts to enhance flavor (use sparingly).
