Prepare brioche toasts
Slice brioche into four even 1/2-inch slices if not pre-sliced. Heat a skillet over medium heat and add 1 tablespoon unsalted butter. When butter is foaming and just beginning to brown, add the brioche slices and toast 1–2 minutes per side until golden and crisp at the edges. Transfer to a wire rack to cool slightly so they remain crisp.
Make garnish components
In a small bowl combine 2 tablespoons crème fraîche with 1/4 teaspoon finely grated lemon zest and a pinch (about 1/16 tsp) of the fine sea salt. Stir until smooth and adjust to taste. In another small ramekin gently mix the finely minced shallot (1 tsp), rinsed and drained capers (1 tsp) and 1/2 teaspoon lemon juice from the lemon half; season with a light grind (about 1/32 tsp) of black pepper. Place the crumbled hard-cooked egg yolk (1 tbsp) in a separate small dish. Finely chop the fresh chives (1 tablespoon) and set aside with microgreens or dill sprigs for garnish.
Plate the service
Place the four brioche toasts on a chilled or room-temperature serving plate. Spoon a dollop (about 1/2 tablespoon) of the lemon-crème fraîche onto each toast and gently spread into a small circle in the center, leaving a slight rim so the toast remains crisp. On each toast add a small pinch of the shallot-caper mix or use the mixes to offer variety across toasts (for example, two with shallot-caper, one with egg yolk, one plain crème fraîche).
Portion the caviar
Using a non-metal spoon (mother-of-pearl, bone, or plastic) gently loosen the 1 ounce of golden Kaluga caviar from its tin and portion small quenelles or mounds (roughly 1/4 ounce per toast, or one tablespoon total per serving) on top of the crème fraîche on each toast. Handle delicately to preserve the pearls. Do not press them into the toast—let them sit lightly on top.
Garnish and finish
Sprinkle a few crumbs of the crumbled egg yolk (about a scant 1/4 teaspoon per toast) and a few snips of chives over the caviar. Add a microgreen or small dill sprig to each toast. Finish with a very light pinch of fine sea salt divided across the plate (use sparingly) and a tiny grind of black pepper if desired. Serve the remaining lemon wedge at the side for guests to squeeze a faint touch of lemon if they choose.
Service notes
Serve immediately so the brioche remains warm/crisp and caviar is cool. Keep any unused caviar chilled on ice and return to refrigeration promptly. Recommend 1 ounce caviar total for one serving plated as four small toasts; adjust quantities proportionally for more guests.
