Prepare seasoned rice
If using leftover cooked sushi rice, break up any large clumps and warm slightly so it's workable but not hot. In a small bowl, mix rice vinegar, sugar and salt until dissolved. Fold this seasoning gently into 3 cups of cooked short-grain rice until evenly combined. Spread rice in an even layer on a tray and refrigerate, uncovered, for 30–45 minutes to dry slightly (this helps achieve a crisp crust).
Form rice cakes
Wet your hands with water to prevent sticking. Portion the chilled rice into 12 equal pieces (about 2 tablespoons each wet weight, or compacted into 1.5–2 inch oval mounds). Press each portion firmly to compact — you want dense, cohesive cakes with a flat bottom. Place them on a tray and refrigerate another 10–15 minutes to firm up (or freeze 10 minutes for faster setting).
Fry rice
In a heavy skillet (cast-iron or nonstick) heat 2 tablespoons neutral oil over medium-high. Add rice cakes, flat side down, working in batches to avoid crowding. Flatten lightly with a spatula and cook until the bottom is deeply golden and crisp, about 3–4 minutes. Flip and cook the other side 2–3 minutes. For a uniformly crisp crust, transfer the pan-fried cakes to a deep skillet or pot with 1 cup neutral oil heated to 350°F (175°C) and deep-fry 30–45 seconds per piece until puffed and crisp. Drain on paper towels and keep warm in a low oven (200°F / 95°C) while you finish other components.
Spicy Tuna
Prepare tuna just before serving: ensure tuna is very cold and finely diced into small 1/8–1/4 inch pieces. In a bowl, combine mayonnaise, chili garlic sauce, Sriracha, soy sauce, and sesame oil. Taste and adjust heat/salt as desired. Add diced tuna, sliced scallions, toasted sesame seeds and 1/4 teaspoon kosher salt. Fold gently until tuna is evenly coated but pieces remain distinct. Refrigerate briefly while plating (do not overmix or let sit too long).
Citrus Ponzu & Garnishes
Make a quick citrus ponzu: whisk together ponzu, fresh lime juice and mirin. Taste and adjust — it should be bright, salty-acidic. If you like a spicier finish, stir in a teaspoon of chili oil or drizzle on finished pieces.
Assemble: place each warm crispy rice piece on a serving platter. Mound about 1 to 1 1/2 tablespoons of the spicy tuna on top of each rice cake, pressing lightly so it adheres. Spoon a few drops (about 1/4 tsp) of citrus ponzu around or on top of each piece — avoid soaking the rice. Garnish with microgreens or shiso, a few thin slices of jalapeño if desired, a small sprinkle of sesame seeds, and a tiny smear of chili oil if using. Serve immediately so the rice stays crisp.
Serving & timing note: Crispy rice is best eaten within 5–10 minutes of assembly. Keep extra spicy tuna chilled and extra rice cakes warm and dry until ready to top. Provide pickled ginger on the side if desired.
