Spicy Tuna Filling

    Prepare tuna

    Keep the sushi-grade tuna chilled until ready to use. Using a very sharp knife, trim any sinew and dice the tuna into small, even 1/4" pieces. Place diced tuna in a medium mixing bowl.

    Mix seasoning

    Add the Japanese mayonnaise, Sriracha, chili oil (if using), soy sauce, sesame oil, and rice vinegar to the tuna. Stir gently until the tuna is evenly coated. Be careful not to smash the pieces; use folding motions to combine.

    Finish filling

    Add the thinly sliced scallions, toasted sesame seeds, salt, and black pepper. Taste and adjust heat or salt: add up to 1 more teaspoon Sriracha for more heat or 1/2 tsp soy sauce for saltiness. Chill in the refrigerator for 10–15 minutes to let flavors meld (optional).

    Prepare rice and components

    If not already done, cook and season sushi rice (short-grain rice cooked, then folded with a mixture of rice vinegar, sugar, and salt to taste). Have nori, cucumber, avocado, pickled ginger, and garnishes ready.

    Build a bowl

    Spoon 1 cup of warm or room-temperature sushi rice into each serving bowl (recipe yields 2 servings). Divide the spicy tuna evenly on top of the rice (about 5 oz tuna per bowl). Arrange cucumber matchsticks, avocado slices, and pickled ginger around the tuna. Drizzle 1/2 tablespoon spicy mayo and 1/2 teaspoon Sriracha over each bowl. Sprinkle with furikake or microgreens and a pinch more toasted sesame seeds.

    Make hand rolls (optional)

    For hand rolls or small sushi, cut nori into rectangles, place a small amount of rice near one edge, top with spicy tuna and cucumber, then roll tightly. Serve immediately to keep nori crisp.

    Serve chilled or at room temperature. Provide extra Sriracha, soy sauce, and pickled ginger at the table. Consume raw tuna within a few hours of preparation and keep refrigerated if not served immediately.
