    Pat and season shrimp

    Pat the shrimp dry with paper towels to remove surface moisture. Place in a bowl and season with 1 tsp kosher salt and 1 tsp freshly ground black pepper; toss to coat evenly.

    Prep aromatics

    Peel and mince 3 garlic cloves, zest one lemon to yield about 1 tsp zest, and juice lemon to get about 2 tablespoons juice. Chop enough parsley to yield 2 tablespoons.

    Heat pan

    Place a large skillet over medium-high heat. Add 2 tablespoons olive oil and 2 tablespoons unsalted butter. Heat until butter melts and the mixture is shimmering but not smoking (about 1–2 minutes).

    Sear shrimp

    Add the seasoned shrimp in a single layer, making sure not to overcrowd the pan (cook in batches if necessary). Sear for 1.5–2 minutes on the first side until the edges start to turn pink and the underside has a golden edge.

    Flip and add aromatics

    Flip the shrimp and immediately add the minced garlic (and 2 tablespoons dry white wine if using). Stir the shrimp to coat with butter and oil, cooking another 1–1.5 minutes until shrimp are opaque and just cooked through (internal temperature about 120–130°F / 49–54°C). Be careful not to overcook.

    Finish with lemon and herbs

    Remove the pan from the heat. Add the 2 tablespoons fresh lemon juice, 1 teaspoon lemon zest, and 2 tablespoons chopped parsley. If you like heat, sprinkle 1/4 tsp red pepper flakes. Toss to combine so shrimp are glazed and flavors meld.

    Rest and serve

    Let the shrimp rest in the pan for 1 minute to absorb flavors. Taste and adjust seasoning with additional salt, pepper, or lemon if needed. Serve immediately with crusty bread to soak up pan juices or over rice/pasta as desired.
