Salmon & Marinade
Finish & Garnish
Method
Salmon & Marinade
- 1
Prepare marinade
In a medium bowl, whisk together 2 tablespoons olive oil, 2 tablespoons fresh lemon juice, 1 tablespoon soy sauce, 1 tablespoon honey, 2 teaspoons minced garlic, 1 tablespoon chopped fresh dill, 1 teaspoon salt, and 1/2 teaspoon freshly ground black pepper until combined and slightly emulsified.
- 2
Marinate salmon
Pat the salmon fillets dry with paper towels. Place fillets skin-side down in a shallow dish or zip-top bag. Pour about three-quarters of the marinade over the salmon, reserving the remainder for basting and finishing. Ensure the fillets are evenly coated, then cover or seal and refrigerate for 15–30 minutes (no more than 1 hour) to let flavors penetrate.
- 3
Bring to temperature
About 10 minutes before cooking, remove the salmon from the refrigerator to come closer to room temperature. This helps promote even cooking.
Cook & Finish

- 5
Sear salmon skin-side down
Place the salmon fillets in the pan skin-side down. Press gently with a spatula for 10 seconds to ensure full skin contact. Cook without moving for 4–5 minutes, until the skin is crisp and the fish is cooked about two-thirds of the way through (flesh will become opaque from the bottom up).
- 6
Flip and finish
Carefully flip the fillets and cook skin-side up for 1.5–3 minutes, spooning the reserved marinade over the tops once, until the salmon registers 125–130°F (52–54°C) for medium-rare to medium, or cook to your preferred doneness. Total cook time will be 6–8 minutes depending on thickness.
