Tea Base

Method

Tea Base

  1. 1

    Measure and heat water

Bring 300 ml filtered water to just under boil, about 75–80°C (170–176°F). For delicate sencha, avoid full boil to prevent bitterness.

  2. 2

    Steep sencha

Place 3 g sencha leaves in a small teapot or infuser. Pour the 300 ml hot water over leaves and steep for 1 to 1.5 minutes. Short steep preserves the sweet vegetal and umami notes.

  3. 3

    Strain and chill

Immediately strain the tea leaves to stop extraction. Transfer the brewed sencha to an ice bath or refrigerator and chill until cold (about 10–15 minutes).

  4. 4

    Optional matcha boost

If using matcha, whisk 1 tsp matcha with 20–30 ml of a little hot water to make a smooth paste before combining with the chilled sencha. This intensifies color and mouthfeel.

  5. 5

    Dilute to serving volume

Combine the chilled brewed sencha with 200 ml filtered cold water to reach approximately 500 ml total volume (yields a slightly lighter, beverage-strength concentrate appropriate for nitro). Stir gently to combine.

Sweetener & Flavor (optional)

  1. 6

Add 15 ml simple syrup or honey syrup to the chilled tea and stir until thoroughly incorporated. Taste and adjust: add up to another 10 ml if you prefer sweeter. If using lemon juice, stir in 5 ml now for brightness. Ensure any sweetener is fully dissolved (room-temperature syrups will mix easily).

Nitro & Service

  1. 7

    Chill again

If tea has warmed during flavoring, chill briefly over ice or in fridge so it is cold before nitro infusion (cold liquids hold nitrogen better).

  2. 8

    Load into nitro device

If using a whipped cream-style charger device: pour processed cold tea into the device's container, secure the lid, then charge with one nitrogen (N2) cartridge according to the device instructions. Shake the vessel 10–15 times to encourage gas dissolution. If using a kegerator or nitro tap: transfer the tea into the keg, pressurize with nitrogen at 30–40 psi (follow your system's guidance), and allow 12–24 hours of nitrogen contact for best cascading effect.

  3. 9

    Dispense

Pour the nitro tea into a 12–16 oz glass. For canister/tap systems, pour with the glass at a 45° angle and then straighten to achieve a creamy head and cascading effect. For small charger devices, dispense directly from the device per manufacturer guidance; you should see a fine, velvety foam and a creamy mouthfeel.

  4. 10

    Garnish & serve

Serve immediately chilled. Optional: garnish with a thin lemon wheel on the rim or a light sprinkle of toasted sesame or matcha powder for aroma. Nitro sencha is best enjoyed immediately for maximum creaminess and aroma.

  5. 11

    Storage notes

If not serving immediately, keep the nitro-charged tea refrigerated and under nitrogen pressure. Best consumed within 24–48 hours for flavor and foam quality.
