    Sift and dissolve matcha

    Sift 2 tsp ceremonial-grade matcha powder into a bowl to remove clumps. Add 60 ml hot water (around 80°C / 175°F) and whisk briskly in an M or W motion with a bamboo whisk (chasen) or small frother until fully dissolved and a smooth, frothy paste forms, about 20–30 seconds.

    Combine with cold water and sweeten

    Pour the dissolved matcha into a mixing cup. Add 120 ml cold filtered water and 15 ml simple syrup (adjust to taste). Stir or gently shake to combine. Taste and adjust sweetness.

    Cool with ice

    Fill the serving vessel (a 12–16 oz nitro-capable glass or vessel) with 1 cup ice cubes. Pour the matcha mixture over the ice to chill quickly. If you want a smoother, less diluted drink, cool the matcha in the refrigerator for 10–15 minutes before adding ice.

    Prepare nitro system

    If using a nitro keg: ensure the keg is clean and sanitized, transfer the chilled matcha mixture into the keg, seal, and charge with nitrogen to approximately 30–40 psi depending on your system (consult device instructions). Let the mixture sit under pressure for 12–24 hours for optimal nitrogen infusion. If using a whipped cream charger method: follow manufacturer instructions and use only equipment rated for beverages; typically you would place the chilled matcha in an appropriate siphon or dedicated nitro device and charge with one N2 charger, then shake and release through a stout-style faucet.

    Pour and top

    Dispense the nitro-infused matcha into a glass using a stout faucet or the nitro tap. Hold the glass at a 45° angle and pour slowly to create a creamy cascading effect; the head should be thick and velvety. If using milk for a creamier top, gently float 30 ml chilled milk or milk alternative on the top after pouring or add into the keg before charging for integrated creaminess.

    Garnish and serve

    Lightly dust 1/4 tsp matcha powder over the foam for aroma and visual appeal. Serve immediately with a straw or without so the creamy head can be appreciated.
