Blue Crab Meat

    Inspect and Chill

    Place the picked lump blue crab meat in a shallow bowl. Gently remove any stray cartilage, shell fragments, or discolored pieces picking carefully so lumps remain intact.

    Rinse the crab meat very briefly under cold running water to remove residual brine or shell bits. Do this gently so you don't break the lumps. Drain well in a fine mesh strainer for 1–2 minutes.

    Transfer the drained crab meat to a bowl with 1 cup of ice water and swirl gently for 10–20 seconds to draw out excess salt and any remaining debris. Lift the meat out with a slotted spoon or by hand and place on paper towels to dry. Pat gently — do not press hard.

Seasoning & Binder (for chilled crab salad / crab cakes use)

    In a medium bowl combine 3 tablespoons mayonnaise, 1 tablespoon fresh lemon juice, 1 teaspoon Dijon mustard and 1 teaspoon Old Bay seasoning. Whisk until smooth.

    Stir in the chopped fresh chives and parsley. Taste and adjust seasoning with up to 1 teaspoon more salt or 1/2 teaspoon black pepper if desired.

    Add the drained lump crab meat to the bowl. Using a spatula, fold the crab gently into the dressing mixture 6–8 times, ensuring the lumps remain largely intact. Do not overmix — you want whole lumps distributed through the mixture.

    If serving chilled as a crab salad: transfer to a chilled serving bowl or individual plates, cover and refrigerate for 15–30 minutes to let flavors meld. Garnish with microgreens or parsley and serve with lemon wedges and crackers or bread.

    If making crab cakes (optional)

    For crab cakes, after folding, portion crab into 4 equal cakes (about 4 oz each) on a parchment-lined tray. If you prefer a binder, fold in 1/3 cup panko and 1 beaten egg very gently only if needed to hold shape. Chill cakes 20–30 minutes to firm.

    Heat 2 tablespoons neutral oil and 1 tablespoon butter in a skillet over medium heat. Fry the chilled cakes 3–4 minutes per side until golden brown and heated through. Drain on paper towels and serve with lemon wedges.

Optional Garnish & Serving

    Arrange the prepared lump crab (salad or cakes) on a platter. Sprinkle microgreens or chopped parsley over the top. Serve immediately with lemon wedges and crackers or crusty bread.

    If you removed any bones or shell fragments earlier, discard them. Store any leftover dressed crab in an airtight container in the refrigerator for up to 2 days.
