Burger Patties

Prepare beef mixture
Place 1.5 lbs ground beef in a large bowl. Add 1 tsp kosher salt, 1 tsp freshly ground black pepper, 1 tbsp Worcestershire sauce, 1/2 cup grated and squeezed yellow onion, and 1/2 tsp garlic powder. Gently fold the ingredients together with your hands or a spatula until just combined; avoid overworking the meat to keep patties tender.

Form patties
Divide the mixture into four equal portions (about 6 oz each). Lightly shape each portion into a loose patty about 3/4" thick, with a shallow 1/2"-wide indentation in the center of each patty to prevent bulging during cooking. Press firmly enough to hold shape but not compact.

Chill (optional)
If time allows, place formed patties on a tray, cover loosely, and refrigerate for 20–30 minutes. Chilling helps them keep shape on the grill and develops flavor.

Cook patties
Place patties on the hot grill or skillet, indentation-side up. Cook undisturbed 3–4 minutes until a deep brown crust forms. Flip once and cook 3 minutes for medium-rare to medium, or 4–5 minutes for medium-well. When patties have about 1 minute remaining, place a slice of sharp cheddar on each patty and close the grill lid or cover the skillet to melt the cheese.

Carryover rest
Remove patties to a plate and let rest 3–5 minutes. This allows juices to redistribute and finishing carryover cooking to complete.

Prepare condiments
Divide mustard, ketchup, and mayonnaise among the bottom and top buns as desired (for example: bottom bun — 1 tsp mayo + 1 tsp ketchup; top bun — 1/2 tsp mustard).

Assemble burgers
Place a toasted bottom bun on a plate. Add a small handful (about 1/4 cup) shredded lettuce, 2–3 slices of tomato, and some dill pickle slices. Set the rested cheeseburger patty on top of the vegetables. Add optional bacon or jalapeño if using. Top with the buttered and toasted bun. Serve immediately.

Bacon
Cook 4 slices bacon in a skillet over medium heat until crisp, about 6–8 minutes, turning occasionally. Drain on paper towels and place on burgers when assembling.

Caramelized onions
Thinly slice one large onion and cook in 1 tbsp oil over medium-low heat, stirring occasionally, until deeply golden and soft, 25–30 minutes. Season with a pinch of salt and stir in toward the end of cooking.
