Prepare peach purée (if not using bottled)
Peel, pit and roughly chop one ripe peach. Place peach pieces in a small blender or food processor and blend until smooth. If needed, strain through a fine mesh sieve for a silkier purée (about 1 oz yielded). Chill until ready to use.

Fill a cocktail shaker halfway with ice (about 1/2 cup). Add 2 oz peach vodka, 1 oz fresh peach purée, 1/2 oz fresh lemon juice, and 1/2 oz simple syrup. Add 2 dashes peach bitters if using.

Hard shake the mixture for 10–12 seconds until well chilled and slightly frothy from the purée.

Strain the shaken mixture into a chilled flute or Collins glass filled with fresh ice (use more ice if serving in a Collins).

Garnish with a thin peach slice on the rim and a small mint sprig tucked against the glass. Optionally slap the mint between your palms once to release aroma before placing it.
