Pancake Batter
Topping & Finish
Method
Pancake Batter
Dry ingredients
In a large mixing bowl, whisk together 2 cups all-purpose flour, 2 tablespoons granulated sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon fine sea salt until evenly combined. This ensures leavening agents are distributed evenly for consistent rise.
Wet ingredients
In a separate bowl or large measuring cup, whisk 2 cups buttermilk with 2 large eggs until smooth. Add 4 tablespoons melted unsalted butter and 1 teaspoon vanilla extract and whisk again until homogeneous. Make sure the melted butter is slightly cooled so it doesn't scramble the eggs.
Combine batter
Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold with a spatula or wooden spoon until just combined — a few small lumps are fine. Overmixing develops gluten and will toughen the pancakes. Let the batter rest 5 to 10 minutes while you preheat the pan; this rest hydrates the flour and helps produce tender pancakes.
Cook & Finish
Preheat and cook
Place a heavy skillet or griddle over medium heat and allow it to preheat for 3 to 5 minutes. Lightly grease the surface with a small amount of the 2 tablespoons unsalted butter or neutral oil. For consistent pancakes, use a 1/4-cup measure for each pancake. Pour batter onto the hot surface, leaving 1 to 2 inches between pancakes. Cook 2 to 3 minutes until small bubbles form on the surface and edges start to set. Flip and cook 1 to 2 minutes more until golden brown and cooked through. Adjust heat as needed to prevent over-browning.
Keep warm
If making multiple batches, transfer finished pancakes to a baking sheet and keep warm in a 200°F (95°C) oven while you finish cooking the rest. This preserves texture and warmth without drying them out.
