Cook sugar syrup

In a small saucepan, combine 120 ml water and 3 tablespoons granulated sugar. Warm gently over medium heat, stirring until sugar dissolves. Bring to a gentle simmer for 1 minute, then remove from heat and let cool to room temperature (about 10 minutes).

Prepare berries

While the syrup cools, wash the mixed berries. Hull and quarter larger strawberries so all fruit is roughly the same size. Reserve 1/2 cup whole berries for serving.

Blend and strain

Place 4 cups mixed berries in a blender with the cooled sugar syrup and 2 tablespoons fresh lemon juice. Blend on high until very smooth, about 30–45 seconds. For an extra-smooth sorbet, pour the purée through a fine-mesh sieve into a bowl, pressing with a spatula to extract as much liquid as possible. Discard seeds and solids left in the sieve.

Chill base

Taste the purée and adjust sweetness or acidity—add up to 1 tablespoon sugar or additional lemon juice to taste. Chill the strained purée in the refrigerator until cold, at least 1 hour (or up to 4 hours). Chilling ensures faster, finer freezing.

Freeze in ice cream maker

Pour the cold berry purée into an ice cream maker and churn according to manufacturer instructions until it reaches a soft-serve consistency (typically 20–30 minutes). If you don't have an ice cream maker, pour the purée into a shallow metal pan, freeze for 45 minutes, then vigorously scrape with a fork to break up ice crystals; repeat scraping every 30–45 minutes until smooth and scoopable (3–4 cycles).

Harden

Transfer churned sorbet into an airtight container, smoothing the top. Press a piece of plastic wrap directly onto the surface to prevent ice crystals. Freeze at least 2 hours to firm before serving.

Orange-Strawberry Syrup

Combine and cook

In a small saucepan combine 1 cup hulled, quartered strawberries, 120 ml fresh orange juice, 4 tablespoons granulated sugar, and 1 teaspoon orange zest. Warm gently over medium heat, stirring until the sugar dissolves and the strawberries begin to break down, about 5–7 minutes.

Finish syrup

Remove from heat and stir in 1/2 teaspoon vanilla extract. For a chunky sauce leave as is; for a smooth syrup, blitz with an immersion blender or regular blender until smooth. Taste and adjust: add a pinch more sugar if too tart, or a squeeze more orange if needing brightness.

Cool

Cool the syrup to room temperature, then chill in the refrigerator until ready to serve (about 30–60 minutes). The syrup will thicken slightly as it cools.

Finishing & Serve

Spoon or scoop the firmed sorbet into chilled bowls or coupe glasses (2 generous scoops per serving).

Drizzle 1–2 tablespoons of the chilled orange-strawberry syrup over each serving. Reserve extra syrup on the side for guests who want more.

Garnish each portion with a few of the reserved whole berries and a sprinkle of finely chopped mint if using. Let sit 2–3 minutes at room temperature before serving so the syrup softens the sorbet slightly.
