Method
Base Juice
Make strawberry puree
Place the hulled strawberries and 2 cups cold water in a high-speed blender. Blend on high until completely smooth, about 30–45 seconds. If you prefer a smoother texture, strain the puree through a fine-mesh sieve into a bowl, pressing with a spatula to extract as much liquid as possible. Discard seeds and solids left in the sieve.
Citrus Sour
Combine lemon sour
In a measuring cup or small pitcher, combine 1/2 cup fresh lemon juice with 2 tablespoons simple syrup. Stir until the syrup is fully dissolved. Taste and adjust sweetness: add up to 1 tablespoon more simple syrup if the lemon is very tart.
If you don't have simple syrup prepared: make it by combining equal parts granulated sugar and hot water (for this recipe, 2 tablespoons sugar and 2 tablespoons hot water). Stir until fully dissolved, then cool before using.
Finish & Fizz
Assemble the Pink Panther
Fill two serving glasses (each ~12 oz) with ice, dividing 1 cup ice between them. Pour half of the strawberry puree into each glass (about 1/2 cup puree per glass). Divide the lemon-sour mixture between the glasses, pouring about 2 tablespoons of the lemon-sour into each. Stir gently to combine the puree and lemon-sour in each glass.
