Crab Rangoon Filling
Prepare crab
If using lump crab, pick through and remove any cartilage; finely chop. If using imitation crab, finely chop into small pieces similar in size to minced onion.
In a medium bowl, combine the softened cream cheese and chopped crab. Mix with a sturdy spoon or spatula until evenly blended and smooth.
Add the thinly sliced green onions, minced garlic, soy sauce, Worcestershire sauce, sugar, ground white pepper, and sesame oil. Fold in the optional chopped water chestnuts if using. Taste and adjust seasoning (add a little more soy sauce for salt or a pinch more sugar if desired). The mixture should be scoopable but not runny.
Cover and chill the filling in the refrigerator for 15–20 minutes to firm up slightly; chilled filling is easier to handle when assembling.
Wrappers & Assembly
Prepare your work surface: lightly dust a clean counter with the tablespoon of flour to prevent sticking. Place a small bowl with the beaten egg mixed with 1 tsp cold water (egg wash) nearby and have the wonton wrappers and chilled filling ready.
Lay one wonton wrapper flat. Place about 1 teaspoon (about 8–10 g) of the crab filling in the center. Do not overfill; you should be able to fold without tearing the wrapper.
For the classic pouch shape (optional): bring the two side corners together above the triangle, overlap slightly, and press to seal using a little egg wash if needed. Alternatively, keep as triangles or use your preferred folding method. Ensure all seams are well sealed to prevent oil from entering.
Place assembled Rangoon on a parchment-lined tray in a single layer, not touching. Repeat until all filling and wrappers are used. If making ahead, cover lightly with plastic wrap and refrigerate no more than 1 hour before frying to avoid soggy wrappers.
Frying
Pour oil into a deep, heavy-bottomed pot or deep fryer to a depth of about 2–3 inches (enough to fully submerge the Rangoon). Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of wrapper into the oil — it should sizzle and rise steadily without browning instantly.
Working in small batches (6–8 pieces depending on pot size), gently lower the Rangoon into the hot oil using a spider or slotted spoon, seam-side up. Fry for about 2–3 minutes, turning gently as needed, until they are golden brown and crisp.
Remove fried Rangoon with a slotted spoon to a wire rack placed over a baking sheet or onto paper towels to drain excess oil. Allow to rest 1–2 minutes — they will crisp further as they cool slightly.
Repeat frying remaining Rangoon, allowing oil to return to 350°F between batches. Do not overcrowd the pot or the oil temperature will drop.
Sweet Chili Dipping Sauce
In a small bowl, combine the store-bought sweet chili sauce with rice vinegar and fresh lime juice. Stir until smooth.
Taste and adjust: add more rice vinegar for tang, a little water to thin, or red chili flakes for heat. Stir in chopped cilantro if using.
Transfer sauce to a small serving bowl and serve alongside freshly fried Crab Rangoon.
To Serve & Storage
Leftovers: refrigerate cooled Rangoon in an airtight container for up to 2 days. Re-crisp in a 375°F (190°C) oven for 6–8 minutes or in an air fryer at 350°F (175°C) for 4–6 minutes. Do not microwave (will become soggy).
