Method
Fresh Juice Base
Prepare fruit
Rinse blackberries and pineapple. Remove core and tough skin from pineapple and cut into roughly 1-inch chunks so they blend easily.
Blend
Place 1 cup blackberries, 1 cup chopped pineapple, 1 tablespoon fresh lemon juice, and 1 teaspoon sugar or simple syrup (if using) into a blender. Blend on high for 30–45 seconds until smooth and uniformly puréed.
Strain (optional)
If you prefer a smoother juice, pour the purée through a fine-mesh sieve into a bowl, pressing with the back of a spoon to extract as much liquid as possible. Discard seeds and pulp left in the sieve.
Finish & Serve
Assemble the drink
Fill a 16-oz serving glass with 1 cup (about 8 oz) of ice. Pour the strained or unstrained blackberry-pineapple purée over the ice, filling the glass about one-third to half full (roughly 3–4 oz of purée).
Garnish and serve
Garnish with 3 fresh blackberries skewered on a cocktail pick, a pineapple wedge on the rim, and an optional mint sprig. Serve immediately with a straw.
Notes
Adjust sweetness by increasing or omitting the sugar/simple syrup depending on the ripeness of fruit and sweetness of the soda. For a larger batch multiply ingredients by the number of servings and combine purée and soda just before serving to maintain carbonation.
