Hard-boil eggs
Place 6 large eggs in a single layer in a saucepan and cover with cold water by about 1 inch. Bring to a gentle boil over medium-high heat. Once boiling, reduce heat to maintain a simmer and cook for 9 minutes for fully set yolks with a little creaminess, or 10–11 minutes for fully firm yolks.

Prepare sausage mixture
In a bowl, combine 1 lb mild pork breakfast sausage, 1/4 cup finely chopped yellow onion, 2 tbsp finely chopped fresh parsley, 1 tsp Worcestershire sauce, 1/2 tsp salt and 1/2 tsp freshly ground black pepper. Mix until evenly combined but avoid overworking which can make the coating dense.

Divide the sausage into 6 equal portions (about 2.6 oz / 73 g each). Roll each portion into a flat disc large enough to wrap an egg.

Set up dredging station
Place 1/2 cup all-purpose flour seasoned with 1/4 tsp salt and 1/4 tsp pepper in a shallow bowl. In a second bowl, whisk 2 large eggs with 2 tbsp milk. In a third shallow bowl, place 1 cup fine dry breadcrumbs or panko.

Working one at a time, roll each sausage-coated egg in the seasoned flour, shaking off excess. Dip into the egg wash until fully coated, then roll thoroughly in breadcrumbs to cover. For extra-crispy, double-dip: back into egg wash and breadcrumbs again. Place breaded eggs on a tray and chill 10–15 minutes to help coating adhere.

Heat oil
Pour about 2 cups neutral oil into a deep, heavy-bottomed skillet or Dutch oven to reach about 2 inches depth (or use a deep fryer). Heat oil over medium heat to 350°F (175°C). If you don't have a thermometer, test with a small breadcrumb: it should sizzle and brown in about 45–60 seconds.

Fry the Scotch-Irish eggs in batches (do not overcrowd) for 4–5 minutes, turning gently with a slotted spoon or spider so all sides brown evenly, until coating is deep golden brown and internal temperature of sausage reaches 160°F (71°C). If needed, reduce heat slightly to maintain even color without burning.

Using a slotted spoon, transfer eggs to paper towels to drain briefly. Sprinkle with 1/2 tsp coarse sea salt while still hot. Let rest 2–3 minutes to finish cooking and settle juices.

Serve Scotch-Irish eggs halved or whole with Dijon mustard or malt vinegar (2 tbsp) and a sprinkle of chopped fresh chives (optional). They are best served warm; if making ahead, reheat in a 350°F (175°C) oven for 8–10 minutes to crisp the coating.
