    If using whole dill pickles, cut each pickle into quarters lengthwise to make spears. Pat spears dry with paper towels to remove excess brine. Place spears in a shallow bowl.

    Pour buttermilk over the pickle spears to coat. Add hot sauce if using. Cover and refrigerate for 20–30 minutes to mellow the brine and help the batter adhere.

Breading

    In a wide shallow bowl or plate, whisk together the flour, cornmeal, panko (if using), cornstarch, baking powder, garlic powder, onion powder, smoked paprika, cayenne, salt, and black pepper until evenly combined.

    In a separate bowl, beat the eggs with the milk until smooth.

    Dredge process

    Working in small batches, remove pickle spears from the buttermilk, letting excess drip back into the bowl. First dredge each spear in the dry mix, pressing lightly so a thin coat adheres. Then dip into the egg-milk wash, letting excess drip off. Return the spear to the dry mix and press gently to form an even, well-coated crust. For an extra-crunchy double coat, repeat the egg wash and dry coating once more.

    Place coated spears on a wire rack set over a baking sheet. Let rest 5 minutes for coating to set while you heat the oil.

For Frying

    Pour oil into a heavy-bottomed pot or deep-fryer to a 2–3 inch depth (about 4–6 cups depending on vessel). Heat oil over medium-high heat to 350°F (175°C). If you don't have a thermometer, test with a small piece of bread or a pinch of the dry mix—it should sizzle steadily and brown in about 40–60 seconds.

    Fry the pickle spears in small batches (6–8 spears depending on pot size) to avoid overcrowding. Gently lower spears into the hot oil with a slotted spoon or spider. Fry until golden brown and crisp, about 2–3 minutes per batch.

    Use a slotted spoon to transfer fried pickles to a paper towel-lined plate or a wire rack to drain. Lightly season with a pinch of kosher salt while hot. Repeat with remaining spears and bring oil back to temperature between batches.

BBQ Ranch Dipping Sauce

    While pickles are resting or frying, whisk together mayonnaise, sour cream, prepared ranch, BBQ sauce, lemon juice, honey (if using), and black pepper in a small bowl until smooth and combined.

    Taste and adjust: add more BBQ for sweetness/smokiness, more ranch for tang, or a pinch of salt if needed. Transfer to a serving bowl and sprinkle smoked paprika on top for color.

    Arrange fried pickles on a platter, sprinkle with chopped parsley, and serve immediately with BBQ ranch and lemon wedges on the side for squeezing if desired.
