Buffalo chicken mixture

Prepare cream cheese
Preheat oven to 375°F (190°C). If using block cream cheese, place it on the counter for 20–30 minutes to soften. Alternatively, microwave the block for 20 seconds to soften but do not melt.

Mix base
In a large bowl, combine softened cream cheese (8 oz), sour cream (1 cup), and ranch dressing (1 cup). Use a spatula or whisk to make a smooth, even mixture.

Add seasonings and sauce
Stir in hot wing sauce (3 tbs), garlic powder (1 tsp), onion powder (1 tsp), salt (1/2 tsp), and black pepper (1/4 tsp) until evenly incorporated.

Add chicken and cheese
Fold in cooked shredded chicken (3 cups) and shredded cheddar cheese (1 cup) until the chicken is fully coated and evenly distributed. If using crumbled blue cheese (1 tbsp), fold it in now or reserve for topping.
Bake & finish

Transfer to baking dish
Spoon the buffalo chicken mixture into a 1-quart (or similar) oven-safe baking dish, smoothing the top with a spatula.

Top and bake
Sprinkle the additional shredded cheddar cheese (1/2 cup) evenly over the top. Bake in the preheated oven for 20–25 minutes, until the dip is bubbling around the edges and the cheese is melted and lightly golden.

Broil for color (optional)
If you want a more browned top, place the dish under the broiler for 1–2 minutes—watch carefully to avoid burning.

Garnish
Remove from the oven and let rest 3–5 minutes. Sprinkle sliced green onions (2 tbsp) and extra crumbled blue cheese or a drizzle of extra hot sauce (1 tbsp) if desired.
To serve

Arrange tortilla chips or crisp tortillas (6 cups) and celery sticks (2 cups) on a platter. Serve the hot buffalo chicken dip straight from the baking dish, allowing guests to scoop with chips or celery.

Leftovers: cool to room temperature, cover and refrigerate for up to 3 days. Reheat in a 350°F (175°C) oven for 10–12 minutes or until warmed through, or microwave in 30-second intervals stirring between until hot.
