    Prepare glass and ice

    Place the collins/highball glass in the freezer for 5 minutes or fill it with ice to chill. If using fresh ice, fill the glass about three-quarters full with cubed ice (approximately 1 cup).

    Build the drink

    Measure and pour 0.5 oz fresh lime juice into the chilled glass, then add 0.5 oz ginger liqueur (or ginger syrup). Add 2 oz dry hard cider on top of those ingredients.

    Top with 6 oz ginger cider (or ginger beer-cider hybrid). Pour slowly to preserve carbonation and create a gentle layering effect.

    Add 2 dashes of Angostura bitters over the top if using; this adds aromatic depth and balances sweetness.

    Mix gently

    Use a bar spoon to gently stir the drink 4–6 times, just enough to combine the liquids without knocking out too much fizz.

    Garnish the rim or top with a lime wheel and spear a piece of candied ginger onto a cocktail pick. Optionally tuck a mint sprig beside the lime for aroma.
