Prepare the Plantains
Peel the green plantains and cut them into 1-inch thick slices.
Fry the Plantains
Heat the vegetable oil in a large skillet over medium heat. Once hot, add the plantain slices and fry for 3-4 minutes on each side until golden. Remove and drain on paper towels.
Smash the Plantains
Using a flat surface, gently smash each fried plantain slice to about half an inch thickness.
Second Fry
Return the smashed plantains to the hot oil and fry again for 2-3 minutes on each side until crispy. Remove and drain on paper towels, then sprinkle with salt.
Make the Mojo Sauce
In a blender, combine garlic, olive oil, orange juice, lime juice, cilantro, and salt. Blend until smooth.
Serve
Serve the tostones warm with the mojo dipping sauce on the side.
