Red Beans & Sausage

Prepare the Sausage and Vegetables

In a large pot over medium heat, add sliced andouille sausage. Cook until browned, about 5 minutes. Add chopped bell pepper, celery, onion, and minced garlic. Sauté for another 5-7 minutes until vegetables are softened.

Add Seasoning and Beans

Stir in the Cajun seasoning and cook for 1 minute. Add the red beans and chicken broth, bring to a simmer. Reduce heat, cover, and cook for about 30-40 minutes, stirring occasionally.

Prepare the Rice

While the beans are simmering, cook the rice according to package instructions.

Mix Dry Ingredients

In a mixing bowl, combine cornmeal, flour, baking powder, salt, and sugar.

Combine Wet Ingredients

In another bowl, whisk together milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined.

Bake the Cornbread

Pour the batter into a greased baking dish and bake at 400°F (200°C) for about 20-25 minutes, or until golden brown.

Optional - Fried Catfish

Prepare the Catfish

If using, heat oil in a frying pan over medium-high heat. Dredge catfish fillets in cornmeal and fry for about 3-4 minutes on each side until golden brown and cooked through.
