Prepare the Shrimp
In a large bowl, soak the shrimp in buttermilk for at least 30 minutes to tenderize and infuse flavor.
Mix the Dry Ingredients
In a separate bowl, combine the flour, cornmeal, cajun seasoning, salt, and black pepper.
Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Coat the Shrimp
Remove the shrimp from the buttermilk, allowing excess to drip off. Dredge each shrimp in the flour mixture, ensuring an even coat.
Fry the Shrimp
Carefully place the coated shrimp in the hot oil in batches, avoiding overcrowding the pan. Fry for about 2-3 minutes or until golden brown and cooked through.
Drain and Serve
Remove the fried shrimp with a slotted spoon and drain on paper towels. Serve hot with hush puppies, tartar sauce, and lemon wedges.
