Prepare the Meats
Preheat your smoker to 225°F (107°C). Season the brisket and pulled pork with your favorite rub. Smoke the brisket for 1.5 hours per pound and the pulled pork for about 1.5 hours as well, until internal temperatures reach 195°F (91°C) for the brisket and 205°F (96°C) for the pulled pork.
Cook the Chicken
While the brisket and pulled pork are smoking, season the chicken thighs with salt, pepper, and a dash of your favorite spice mix. Grill them over medium heat until the internal temperature reaches 165°F (74°C).
Assemble the Platter
Once all meats are cooked, slice the brisket and pulled pork, and arrange them on a serving platter. Place the grilled chicken thighs next to them. Drizzle the sweet and tangy BBQ sauce over the meats, and drizzle the Alabama white BBQ sauce over the chicken. Garnish with pickles on the side.
