Prepare the Slaw

In a large bowl, combine the shredded cabbage, shredded carrots, and sliced red onion.

Marinate the Slaw

In a separate bowl, whisk together the apple cider vinegar, sugar, salt, and black pepper. Pour this mixture over the cabbage mixture and toss to combine. Let it marinate in the refrigerator for at least 30 minutes.

Prepare the Mahi

Pat the Mahi Mahi fillets dry with paper towels. Rub each fillet generously with blackening seasoning.

Cook the Mahi

Heat olive oil in a cast-iron skillet over medium-high heat. Once hot, add the fillets and cook for about 3-4 minutes on each side, or until the fish is cooked through and has a blackened crust.

Plate the blackened Mahi Mahi fillets and serve alongside the marinated slaw and pickles.
