Prepare the Slaw

In a large bowl, combine shredded cabbage, shredded carrots, mayonnaise, lemon juice, apple cider vinegar, sugar, and salt and pepper. Mix well and refrigerate for at least 30 minutes to allow the flavors to meld.

Season the Mahi

Pat the Mahi Mahi fillets dry with paper towels. Rub both sides of the fillets generously with the Cajun seasoning.

Cook the Mahi

Heat the olive oil in a large skillet over medium-high heat. Once hot, add the seasoned Mahi fillets and cook for about 3-4 minutes on each side until blackened and cooked through. Remove from heat.

Toast the Buns

While the fish is cooking, toast the burger buns in a separate skillet or in the oven until golden brown.

Assemble the Sandwiches

Spread a layer of creamy tartar sauce (store-bought or homemade) on the bottom half of each toasted bun. Top with a blackened Mahi fillet, a generous scoop of the marinated slaw, and pickles. Place the top bun on each sandwich.

Serve the Blackened Mahi sandwiches hot with extra slaw on the side if desired.
