Prepare the Brisket

Begin by patting the brisket dry with paper towels. In a small bowl, mix together salt, black pepper, paprika, garlic powder, and onion powder to create a dry rub.

Season the Brisket

Generously apply the dry rub all over the brisket, making sure to coat it evenly. Let the brisket sit at room temperature for about 30 minutes to allow the flavors to penetrate.

Prepare the Smoker

Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C) and add the soaked wood chips to the smoker box.

Smoke the Brisket

Place the brisket on the smoker grates, fat side up. Close the lid and smoke for approximately 1.5 to 2 hours per pound, or until the internal temperature reaches 195°F (90°C).

Rest and Slice

Once done, remove the brisket from the smoker and let it rest for at least 30 minutes before slicing against the grain. Serve and enjoy!
