Prepare
Chill glass
Place a coupe or chilled cocktail glass in the freezer for 5–10 minutes, or fill it with ice water while you prepare the cocktail to ensure it is properly chilled.
Measure ingredients
Measure out High Bank Vodka, Ketel One Peach & Orange Blossom, Cointreau, fresh lime juice, house grenadine, and simple syrup (if using).
Mixing
Fill a cocktail shaker with ice until about two-thirds full.
Add 1.5 oz High Bank Vodka, 0.75 oz Ketel One Peach & Orange Blossom, 0.5 oz Cointreau, 0.75 oz fresh lime juice, and 0.5 oz house grenadine to the shaker. If you prefer a slightly sweeter drink, add 0.25 oz simple syrup.
Secure the shaker lid and shake vigorously for 12–15 seconds, until the shaker is very cold and well diluted (the outside of the shaker should frost).
Discard ice or water from the chilled glass if used to chill.
Double-strain the contents of the shaker into the chilled coupe or cocktail glass using a Hawthorne and fine-mesh strainer to remove small ice shards and any pulp from the lime.
Finish & Garnish
Garnish the cocktail by floating 1 tsp of pomegranate seeds in the center of the drink, add a lime wheel to the rim, and optionally slap a mint sprig between your palms to release aromatics and rest it on the edge.
Serve immediately. The bright tartness of lime and pomegranate with the peach/orange blossom vodka and orange liqueur should create a balanced, aromatic cocktail.
