Demerara Simple Syrup (makes ~6 oz)

Demerara Simple Syrup

Combine and dissolve

Add 2 cups demerara sugar and 1 cup water to a small saucepan over medium-low heat.

Stir gently until the sugar is fully dissolved and the mixture is just below a simmer (do not boil).

Remove from heat, let cool to room temperature, then transfer to a clean bottle or jar. Refrigerate. Syrup will keep 3–4 weeks.

Assembly — Old Fashioned

Chill an old-fashioned (rocks) glass by filling it with ice and setting aside while you prepare the cocktail.

Discard the chilling ice from the glass and add one large ice cube (or several large round/clear ice spheres/cubes).

Pour 2 oz Maker's Mark bourbon over the ice.

Add 0.25 oz (about 3/4 teaspoon) demerara simple syrup into the glass.

Add 3 dashes Angostura bitters directly into the glass.

Stir the cocktail gently with a bar spoon for 20–30 seconds (about 30–40 rotations) until properly chilled and slightly diluted. This helps integrate the syrup and bitters with the bourbon.

Express the orange peel: hold the peel with the outside facing down over the drink and give it a firm twist to release oils onto the surface, then rub the rim with the peel and drop it into the glass as garnish.
