Prepare the collards
Rinse collard greens thoroughly under cold running water to remove grit. Stack a few leaves, roll them up, and slice across into 1/2-inch ribbons, or chop into bite-sized pieces. Discard tough stems or reserve for another use.
Prepare the smoked turkey
If using a whole smoked turkey leg or wing, inspect for bones. You can cook the smoked turkey whole with the greens for more flavor, or remove meat from the bone after simmering and return shredded meat to the pot near the end of cooking.

Sweat the aromatics
In a large heavy pot or Dutch oven, heat olive oil or bacon drippings over medium heat. Add the chopped onion and a pinch of salt; cook, stirring occasionally, until translucent and soft, about 5–7 minutes. Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to burn.
Build the pot
Stir in smoked paprika and crushed red pepper flakes (if using) for 30 seconds. Add the smoked turkey piece to the pot and pour in the chicken broth and apple cider vinegar. Add the sugar (if using) to balance acidity. Bring mixture to a gentle simmer.
Simmer greens
Add the chopped collard greens to the pot in batches, pressing them down as they wilt to fit. Once all the greens are in, season with kosher salt and black pepper. Cover and maintain a gentle simmer. Cook until the collards are tender and flavors have melded, about 35–50 minutes depending on the thickness of the leaves.
Adjust and finish
Check for seasoning after about 30 minutes. If liquid has reduced too much, add up to 1/2 cup additional broth or water to maintain some cooking liquid—collards should be moist but not soupy unless you prefer them stewy. Taste and adjust salt, pepper, vinegar, or sugar. Remove the smoked turkey piece and shred meat from the bone if you kept it whole. Return shredded meat to the pot and stir to combine; heat through for 3–5 minutes.
Finishing
Before serving, if desired, add extra apple cider vinegar or a splash of hot sauce to brighten the dish. Serve hot alongside cornbread, rice, or your preferred main. Leftovers keep well refrigerated for 3–4 days and flavor often improves overnight.
