1. Prepare the Beef

Finely chop the beef tenderloin into small cubes using a sharp knife. Make sure the beef is very fresh.

2. Mix Ingredients

In a bowl, combine the chopped beef, egg yolk, capers, cornichons, shallot, Dijon mustard, Worcestershire sauce, olive oil, salt, black pepper, parsley, and lemon juice. Mix well until all ingredients are evenly incorporated.

3. Taste and Adjust

Taste the mixture and adjust the seasoning with more salt or pepper if needed.

4. Serve

Plate the tartare mixture in the center of a chilled plate. Optionally, you can mold it using a ring mold for a nice presentation. Serve immediately with toasted bread or fries on the side.
