Base Espresso & Cocoa
Extract espresso
Pull two shots (about 2 oz total) of fresh espresso into a pre-warmed 10–12 oz cup. If you don't have an espresso machine, brew a strong 6 oz batch of concentrated coffee (Moka pot or Aeropress) and use 2 oz.
Bloom cocoa
In a small bowl or heat-safe measuring cup, whisk the unsweetened cocoa powder with the hot water (about 2 tablespoons) until fully dissolved and smooth, creating a glossy cocoa paste. This prevents lumps and intensifies chocolate flavor.
Combine espresso and cocoa
Pour the cocoa paste into the espresso and stir briskly to combine, tasting for baseline chocolate strength.
Heat the milk: steam or gently heat whole milk to 150–155°F (65°C) while creating microfoam if using an espresso steam wand. If steaming by stovetop, heat until hot but not boiling and whisk vigorously to froth slightly.

In a small ramekin, combine dark brown sugar, miso paste, smoked paprika, ground cayenne, orange zest, and vanilla extract. Stir until it forms a loose paste. The miso adds umami depth that balances the sugar and spice.
Incorporate into mocha
Add the Mississippi Heat paste to the combined espresso and cocoa mixture. Stir vigorously until completely dissolved and evenly distributed. Taste and adjust: add an additional 1/2 tsp brown sugar if more sweetness is desired, or a tiny pinch more cayenne for extra heat.

Garnish and serve
Lightly dust the surface with cocoa powder and finish with one pinch of flaky sea salt to sharpen flavors. Serve immediately while hot. Optionally, stir once before drinking to blend the foam and top flavors.
