Sake Lemonade Base

Juice and sweeten
In a pitcher, combine 1/2 cup fresh lemon juice, 2 tablespoons yuzu juice, and 1/4 cup simple syrup. Stir until the simple syrup is fully incorporated.

Add sake
Pour 1 cup chilled dry or junmai sake into the pitcher with the citrus-syrup mixture. Gently stir to combine. Taste and adjust sweetness: add up to 1 tablespoon more simple syrup if you prefer sweeter.

Prepare glasses
Add ice cubes to four serving glasses (about 1/2 cup ice per glass). Lightly clap or bruise the mint leaves between your palms to release aroma, then divide and tuck 2 mint leaves into each glass.

Top with soda
Pour the chilled sake-lemon-yuzu mixture evenly over the prepared glasses (about 1/2 cup per glass). Top each glass with about 1/2 cup cold club soda or sparkling water to add effervescence. Gently stir once in each glass to combine.
